This simple strawberry raspberry crisp is the perfect date night treat. I made this dessert for Julian when he first ate at my place!

My friends have made a similar crisp for their significant others when they had just started dating. Not long after, they would lock things down. This is why the crisp is affectionately known as the "commitment crisp".

Funnily enough, this is also the same dessert I made the first time Julian came to my apartment for dinner! While I can't say that this is the reason Julian has stuck around, it definitely didn't hurt. He loves this dessert!

I made a couple of tweaks to this recipe. The original one called for rhubarb which is not in season right now. I also added ground cardamom because I love it and could add it to almost anything I bake!

  • First, toss all of the berries, orange zest, cornstarch and sugar in a large mixing bowl. Add them to a greased nine by thirteen inch baking dish. Spread the berries in the dish evenly. This is important, because it ensures that the crisp cooks evenly.
  • Next, we will make the topping for the crisp. Combine all of the dry ingredients with a whisk. Now cut the butter in to the dry ingredients with a knife or a pastry blender - I love to use this one! Make sure that your butter is cold when you combine it into your topping. This is important, because this impacts how the topping comes together and how the butter will melt while it cooks. Your topping should look almost like small pebbles once the butter has been cut in.
  • Finally, spread the topping evenly over the berry mixture and bake for approximately thirty minutes. The topping should be crisp and golden brown and the berries underneath should be bubbling. Let it cool for a few minutes. Serve warm with whipped cream or ice cream.

Ingredients

For the Filling:

  • 3 cups raspberries
  • 3 cups strawberries, quartered
  • 2 tbsp orange zest (approximately 1 orange)
  • 3/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp cardamom

For the Topping:

  • 3/4 cup all purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar, packed
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp salt
  • 6 tbsp cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350F. Grease a 9 x 13 inch baking sheet and set aside. In a large mixing bowl, toss together the filling ingredients. Spread the filling evenly in the baking dish.
  2. In a medium mixing bowl, whisk together the flour, rolled oats, brown sugar, ground cinnamon, ground ginger, and salt. Cut in the cold butter until it looks like small pebbles. Spread it evenly over the baking dish with the filling.
  3. Bake for 30 to 35 minutes, until the topping is golden brown and the filling is hot and bubbling at the edges. Let it cool for 5 to 10 minutes. Serve warm with whipping cream or ice cream.
