These are probably my favorite way to prepare potatoes. They are smooth and soft on the inside, but crispy on the outside. Fresh rosemary and thyme gives these potatoes a lot of flavor that complements main dishes beautifully. I made this recipe for the ham dinner I made for Julian in honor of Easter, and they were fantastic!

What Are Smashed Potatoes?

Smashed potatoes are a mix between a crispy potato and mashed potatoes. Boil the potatoes until they are soft on the inside. Then drain and lay them out on a baking sheet. Next, you smash them with a fork. Coat them with olive oil, and then add your favorite seasonings. Finally, finish the potatoes in the oven to achieve this fantastic crispy yet soft potato with the perfect seasoning. These potatoes are one of my favorite ways to prepare them!

How to Make Simple Crispy Smashed Potatoes

While the full recipe instructions are available below, here are some tips to make the best potatoes ever!

  • Potatoes: For this recipe, I recommend using baby potatoes. They are the perfect size and have a nice soft flesh that is perfect for smashing!
  • Olive Oil: Because you want to coat your potatoes evenly with the oil, I recommend using an olive oil spray for this recipe. This is important, because the oil is what helps make the edges of your potatoes crispy. The olive oil spray is great because it makes it easier to get a thin even layer of oil on all surfaces of the potatoes on the baking sheet.
  • Herbs and Spices: The herbs and spices that you add to your potatoes are what gives them their flavor! In this recipe, I use fresh thyme and rosemary, and ground garlic. While I love these flavors, there are many options when it comes to preparing the perfect smashed potato!

Ingredients

  • 1lb baby potatoes, whole
  • olive oil spray
  • salt and pepper, to taste
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 400F. Add potatoes and water to a large pot and bring to a boil. Reduce heat to a simmer and cover. Cook for approximately 10 to 15 minutes, until the potatoes are just fork tender. Drain the potatoes and spread them onto a parchment lined baking sheet.
  2. Using the back of a fork, press down on the potatoes until they burst and flatten a little (are “smashed”). Spray the potatoes with olive oil and sprinkle with salt and pepper. In a small bowl, combine the rosemary, thyme, and garlic powder. Sprinkle the mixture over the potatoes. Place the potatoes in the oven for approximately 30 minutes. You will bake them for longer if you prefer crispier potatoes.
