How to Make the Best Roasted Mango Habanero Salsa

While the full recipe instructions are available below, here are some tips to get the best results when making this mango habanero salsa.

  • Preheat your oven on the broiler setting. Place your sliced tomatoes, habaneros, red bell peppers, onion, and mango on a foil lined baking sheet. Since this is going under the broiler I do not recommend lining your baking sheet with parchment. Toss the veggies and fruit in the olive oil and place in the oven. Broil for approximately 5 minutes and remove the mangoes once they are softened and lightly brown on the edges. Place the baking sheet back under the broiler for another 5 - 10 minutes. Remove the habaneros and then broil the remaining ingredients for another 5 - 10 minutes.
  • Once all ingredients have been broiled, let them cool for a few minutes so you can handle them. Peel the skin off of the roasted red pepper and pop the garlic out of their papery skins and place in a blender or food processor - I love this one. It comes in various sizes so you can pick your perfect one!
  • Place all of the remaining ingredients including the lime juice and cilantro in the food processor and blend until you get a smooth consistency. I like this salsa a bit smoother, but if you prefer a chunky mango habanero salsa, simply blend it for a shorter period of time.
  • Once you have finished blending the ingredients, place your salsa in an airtight container and let it sit in the fridge for at least a couple of hours to let the flavors come together.

Variations on This Salsa

The key to this salsa is getting the sweet and spicy flavors. Broiling them in the oven gives them their smokey flavor. If you cannot get mango or habaneros, any other sweet tropical fruits and spicy peppers combination would work such as papaya and serrano pepper.

Other additions you could make to this salsa that would be great include jalapeno peppers and red onion.

Habaneros are very spicy! They sit just below ghost peppers as the second highest on the Scoville scale, which measures the capsaicin in peppers and hot sauce. Make sure you wash your hands thoroughly after handling them, especially before touching the area around your eyes. You could even wear gloves just to be safe!

Totally! This salsa adds a great tropical flair to seafood. Make sure you use a fish that has a more pronounced flavor, like salmon or a firmer white fish. Since this salsa has lots of flavor and a higher spice level, you want to use a fish that is not too delicate so that it doesn't overpower the dish.

Is this a good salsa for chicken?
