When Julian and I were in the Okanagan area of B.C. for a long weekend earlier this month, I stocked up on fresh local peaches! This inspired me to try incorporating peaches into dishes I would not normally add them to. The result was this quick and easy dinner! The flavors of peach, balsamic vinegar, and creamy goat cheese complement each other for this delicious yet healthy weeknight meal.

Peaches: late Summer is the perfect time for local peaches, so try to find fresh local peaches if you can. This is important because it will elevate the flavor and texture of your meal!
Balsamic Vinegar: because you are using the balsamic vinegar as part of a recipe, you do not want to use a fancy bottle of it. But since it is the star of this recipe, I would recommend using a mid-level balsamic such as this one.
Goat Cheese: I generally prefer to use goat cheese in my cooking because it has a lower lactose content. If you do not like the flavor of goat cheese, then plain cream cheese would be a good substitute!
Chicken: I cut chicken breasts into strips for this recipe. If you would prefer to use another cut of chicken, make sure that it is cooked through before adding to the peach and balsamic sauce.
Basil: fresh basil is an important addition to this recipe, so I strongly recommend making sure to find fresh and not dried basil for this. In the summer, I even grow my own fresh basil. Herbs that you have grown yourself simply taste better than those from the store!
2 boneless skinless chicken breasts (approximately 1lb), cut into strips
salt and pepper, to taste
1 large shallot, sliced
2 cloves garlic, crushed
2 large peaches (approximately 17oz) sliced into bite sized pieces
2 tbsp balsamic vinegar
2 tbsp chicken broth
3 tbsp chopped fresh basil, plus more for serving
2 tbsp goat cheese, crumbled
Instructions
Heat a large non-stick skillet on high and add oil. Season chicken strips with salt and pepper.
Once the skillet has been heated, cook chicken on high, letting it brown on each side – approximately 5 minutes per side. Be careful here, the skillet will spatter!
Once the chicken is cooked through, turn the heat to low and remove chicken from the skillet. Set chicken aside on a paper towel lined plate. Add shallot and garlic and cook until soft and translucent, approximately 2 minutes.
Add peaches to the skillet and bring heat to high. Cook peaches until soft, approximately 8 minutes.
Add balsamic and chicken broth to the skillet and cook until it reduces, approximately 2 minutes. Stir in basil and cook for another minute.
Add chicken back to skillet and cook until chicken is warmed through, approximately 1 minute. Remove from heat.
Crumble goat cheese over skillet and sprinkle chopped basil on top. Serve.
