Healthy Creamy Mashed Potatoes

Stay at home orders have been extended through the holiday season in Vancouver, and that means we will be having much smaller holiday meals.  I am going to share a series of posts with tips and tricks to prepare a small turkey dinner.  I am also going to share what to do with those leftovers!

This series starts off with mashed potatoes.  They are soft and velvety and should be smothered with a respectable amount of butter!  Mashed potatoes are one of my all-time favorite side dishes.  My dad would always make them with a liberal amount of cream, butter, and roasted garlic.  I am sharing a slightly healthier copycat using a dairy alternative and a more respectable quantity of butter.

How to Make the Best Healthy Creamy Mashed Potatoes

While the full recipe instructions are available below, here are some tips to make the creamiest healthy potato side.

  • Potatoes: the best potatoes to use for mashing are Yukon Gold Potatoes. I generally prefer to cut the potatoes into large chunks before boiling them.  This is great because it drastically reduces the cooking time!  I also recommend salting the water that you boil the potatoes in.  This will help to add flavor to the potatoes as they cook.  Once the potatoes are fork tender, they are ready.  This generally takes approximately 15 minutes of boiling.  Drain the potatoes and then start the mashing process!
  • Milk: instead of cow's milk or heavy cream, I have used oat milk in this recipe.  I had Julian taste test, and he could not tell the difference!  If you prefer to use cow's milk for this side dish, you can substitute it at a 1:1 ratio.  Add the milk slowly and adjust the quantity used to your taste.
  • Butter: although I used a milk alternative for these mashed potatoes, I could not eliminate the butter!  I used regular butter, but if you prefer to use a dairy free alternative that will work well too.
  • Garlic: I love to add some easy oven roasted garlic to these potatoes.  The flavors combine perfectly and elevate the dish as a whole.  This is optional, so if you don't have the time to roast garlic, it won't ruin the dish!

Ingredients

  • 1 + 1/2 lb yellow potatoes, sliced into chunks
  • 3/4 cup oat milk
  • 3 tsp butter
  • OPTIONAL: 4 cloves roasted garlic

Instructions

  1. In a large pot, boil the potatoes in salted water.  Boil until they are fork-tender – this should take approximately 15 minutes of boiling.  I recommend to start checking them at about 10 minutes, and then check every 5 minutes after that.
  2. Once the potatoes are cooked, drain the potatoes and keep them in the pot.  Add the oat milk and butter.  OPTIONAL: add the roasted garlic.  Using a potato masher or large fork, mash the potatoes until they reach your desired consistency. Top with some additional butter, and serve!
