Chanterelles are wild mushrooms that are rare and hard to find. They are known for their distinct yellow-orange color. These golden beauties have a peppery flavor that is unparalleled by any other mushrooms. This is my favorite mushroom to cook with. Chanterelles are delicious as a side dish, but I think they really shine as the main ingredient in a meal like this.

What Do I Need to Make This Chanterelle Mushroom Pasta?

This is one of my favorite easy recipes because of the amazing taste from the chanterelles. It is a real treat for your taste buds! While it is impressive enough of a meal to serve for company, it is also quick and easy enough for a weeknight meal.
How To Make the Best Creamy Pasta with Chanterelle Mushrooms
While the full recipe instructions are available in the recipe card below, here are some tips to make the best pasta with golden chanterelles.
First, we need to prepare our chanterelles for cooking. Since fresh mushrooms typically come to the farmers market straight from being harvested, we will need to clean them. Using paper towels, rinse the chanterelles under cold water and wipe any dirt off of the mushrooms. For the best result, set them aside on a plate to dry completely before cooking them.
Now, let's get cooking! Heat a large pot of water and add a generous amount of sea salt to the water. While we wait for the water to boil, let's start the chanterelle sauce! Heat a large skillet over low to medium heat. Melt about four tablespoons butter and add the shallots, thyme, and garlic. Stir often, cooking slowly until the shallots are softened and garlic is fragrant. Now add your chanterelle mushrooms! Cook, stirring occasionally until the mushrooms start to turn golden brown.
Next, we will add the heavy cream and parmesan to the large pan with golden mushrooms. Stir often and manage the heat on the pan so the sauce does not bubble too much. As we wait for the sauce to reduce, add your pasta to the boiling water. Cook tagliatelle or other noodles until just before al dente. Using tongs, remove the pasta from the pot of boiling water and add to the skillet with the pasta sauce. Allow some of the pasta water to come with the pasta into the pan. The pasta will finish cooking in the pan with the sauce. If needed, add a little bit more pasta water to the pan to get the sauce to go silky smooth.
Once your pasta has finished cooking, it is time to enjoy! Serve topped with fresh parsley or more thyme, shredded parmesan, and freshly cracked pepper. I find this garlicky chanterelle mushroom pasta will be accompanied perfectly either with white wine or red wine. This will serve four as a main or about six as a side dish.

Instructions
Heat a large pot of generously salted water over high heat and bring to a boil. While you wait for the water to boil, heat a large non-stick skillet on medium-low heat and melt the butter. Add shallots, thyme, and garlic and cook, stirring often, until shallots have softened and garlic is fragrant - approximately 2-3 minutes. Add chanterelle mushrooms and cook, stirring occasionally until the mushrooms have softened and start turning golden brown, approximately 7-10 minutes.
Add cream and parmesan to the the skillet and stir often to reduce. While the cream is reducing, add pasta to the boiling water and cook to just before al dente. Transfer the pasta to the skillet and stir it into the sauce, allowing the pasta to finish cooking in the sauce. Add some pasta water to the skillet to create a smooth and silky cream sauce.
Once the pasta has finished cooking in the sauce, top with parsley, more fresh thyme, or shredded parmesan and enjoy!
