I love a good avocado toast that uses a slice of perfectly crisped sourdough or rye bread. However, I sometimes prefer an option with lower carbohydrates. That's where this substitution of sweet potato (or yams) in place of toast comes in!
You can use either sweet potatoes or yams in this recipe - I have photographed using a yam. Slicing the sweet potato thinly allows you to toast it to the perfect point. The toaster gets the slice to a soft and tender consistency, but still has a char and crispiness to the outside of it! While I find this recipe filling on its own, you can make it even heartier by adding a perfect poached egg on top.
