Julian's dad goes fishing and catches plenty of salmon every year.  It is fantastic because we are lucky enough for him to share the fish he catches with us.  We decided to have fish for dinner.  Julian and I were also craving a Mediterranean inspired dish.  We decided to try making a Mediterranean style salmon recipe!

I experimented by adding olives and goat cheese to create an incredible topping!  We both thoroughly enjoyed this meal, so I thought I would share it with all of you!

How to Make the Best Olive and Goat Cheese Salmon

While the full recipe instructions are available below, here are some tips to make the best Mediterranean inspired salmon dish.

  • Salmon: I recommend to always try to cook using wild salmon over farmed salmon.  Wild salmon contains more nutrients than its farmed counterpart.  This recipe uses four fillets of salmon.  We made extra the night we had this so that we had lunch prepared for us the next day!
  • Olive Topping: for the olive topping, we use pitted green olives, capers, lemon juice, panko breadcrumbs, goat cheese, garlic, and olive oil. I recommend chopping the olives into smaller pieces to make them easier to top the salmon with.  However, I would not puree this mixture.  I prefer the chunkier texture of the topping on the salmon.  Mix all of the ingredients together in a mixing bowl and top on each of the salmon before baking.

Ingredients

  • 4 fillets of salmon
  • 3/4 cup green pitted olives, chopped (I used Castelvetrano olives)
  • 1/2 tsp capers, drained
  • 2 tsp panko bread crumbs
  • 1/4 tsp lemon juice
  • 4 tsp crumbled goat cheese
  • 2 cloves garlic, crushed
  • 1 tsp olive oil
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 425F and line a large baking sheet with parchment paper and place the salmon skin side down evenly on the baking sheet.
  2. Add all ingredients except the salmon fillets to a small mixing bowl.  Stir to combine.  Spread evenly onto each of the salmon fillets.  
  3. Bake in the oven for 10 to 12 minutes.  Remove from oven and serve.
