These beef tacos are the perfect game day treat!  The spices in the beef add an amazing flavor.  However, I think the best part of these tacos is probably the avocado lime cream sauce I put on top!  These are a simple, yet delicious snack that everyone will love on game day.  They are easy to share with a group too!

The filling for the tacos is easy to prepare in advance, making this a great recipe for Super Bowl Sunday.  Simply cook the beef with the spices and onions the night before, and keep it in the refrigerator in an airtight container.  When you are ready to make your tacos, fill them and put them in the oven.  If you are cooking the tacos with the beef filling in the refrigerator, simply add an extra few minutes to the cooking time to make sure it is heated through.

How to Make Great Game Day Beef Tacos

While the full recipe instructions are available below, here are some tips to make a great Super Bowl Sunday treat!

  • First, you will cook the beef.  You want to cook it on medium heat, not too quickly.  This is important, because it will ensure the ground meat is not dry.  Once the meat is almost cooked through, add water to the pan.  Cook it until the water thickens to form a sauce.
  • Now, we will prepare the tortillas.  I generally prefer to use a corn tortilla for my tacos, but you can use flour tortillas as well.  To get the tortillas to be more pliable, heat them in the oven for thirty to sixty seconds.  Working quickly, rub one side of the tortilla with a small drop of olive oil and place them oil side down.  Stuff the tortillas with the meat filling and cheese, and any other warm fillings you choose.  Fold the tortillas over and press to keep closed.  Cook the tortillas for approximately five to eight minutes before flipping and cooking for another five minutes.
  • While the tortillas are cooking in the oven, blend the ingredients for the avocado lime crema.  Once the tortillas are ready, serve them with the avocado and lime sauce and chopped cilantro.  Enjoy!

Ingredients

For the Tacos:

  • 1 tsp olive oil
  • 1 lb extra lean ground beef (you could also use ground turkey or chicken)
  • 1 cup white onion, diced (approx. 1 medium)
  • 1/4 tsp chipotle chili pepper
  • 1/4 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 + 1/2 tsp ground cumin
  • 2 tsp paprika
  • salt and pepper, to taste
  • 3/4 cup water
  • 8 corn tortillas (8 inch soft taco size)
  • 8 tbsp shredded tex mex cheese

For the Avocado Lime Sauce:

  • 1/2 medium sized avocado
  • 1/2 cup light sour cream
  • 4 tbsp lime juice
  • 3/4 cup cilantro, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup water

Instructions

  1. Preheat oven to 425F.  Line a large baking sheet with parchment paper and set aside.
  2. Heat a large non-stick skillet on medium heat.  Add the oil and onions and sauté until the onions are softened, approximately 2 to 3 minutes.  Add the ground meat and cook through, breaking apart with a wooden spoon.  Once the meat is almost cooked through, add all of the spices and the water.  Stir to coat the meat well with the spices and water and cook until the water evaporates and thickens to a sauce – approximately 3 to 5 minutes.  Turn off heat and remove the skillet from the stove.
  3. Heat the tortillas for 30 to 60 seconds.  Working quickly, rub a small drop of olive oil on one side of the tortilla and place it oil side down on the parchment paper.  Scoop the meat filling and 1 tbsp of the shredded cheese onto the tortilla.  Fold it closed and press lightly on the edge to secure the tortilla.  Cook the folded tortillas for 5 to 8 minutes.  Flip the tortillas and cook for another 5 to 8 minutes, until the tortillas are crispy and the cheese is melted.
  4. While the tortillas are cooking, add all of the avocado lime sauce to a blender or food processor.  Blend on high for 30 to 60 seconds, pulsing a few times to ensure the ingredients mix well.
