Tacos are one of my favorite weeknight meals.  I especially like to cook with shrimp because it is a low calorie, low fat source of protein that doesn't skimp on flavor.  Tacos are also a great weeknight meal since they can be prepped and cooked very quickly.

How to Make Cajun Spiced Shrimp Tacos

  • Preparing Ingredients: once you start cooking your shrimp, the meal will be ready very quickly.  It is best that you have all of your other ingredients and taco fixings prepared before you start cooking!
  • Shrimp: I always have a bag of frozen shrimp on hand in my freezer.  The best way to thaw your shrimp is to take them out either the night before you plan to have them, or in the morning.  Remove them from the packaging, and thaw them in a large bowl in your fridge.  This will allow the shrimp to thaw slowly and ensure that they keep an optimal texture.  If you are in a hurry or forgot to thaw your shrimp, thaw them in a bowl in the sink, under a constant stream of cool water.  It is important that you not have the water too hot.  Hot water will cook the outside of the shrimp and thaw them unevenly.
  • Cilantro Crema: making the cilantro crema is very easy! Add the cilantro to a food processor and pulse a few times until you reach you desired leaf size.  Add the sour cream and cold water, and pulse more until all the ingredients are combined.  It should have a slightly watery consistency.
  • Other Taco Fixings: other optional fixings that you can serve on your taco include salsa, guacamole, tomatoes, etc.  Get creative and try whatever combination you're feeling!

Cajun Spiced Shrimp Tacos

Ingredients

For the Cilantro Crema:

  • 2 tsp cilantro, chopped
  • 3 tsp low fat sour cream
  • 5 tsp cold water

For the Shrimp Taco Filling:

  • 1 lb shrimp
  • 1 + 1/2 tsp Cajun seasoning
  • 1 tsp olive oil or avocado oil
  • 1 cup white onion (about half a medium sized onion)
  • 2 cloves garlic, crushed

To Serve the Tacos:

  • 6 small sized soft tortillas
  • 6 tsp Tex Mex light shredded cheese
  • 6 leaves of lettuce, shredded

Instructions

For the Cilantro Crema:

  1. In a food processor, pulse the chopped cilantro until you reach your desired leaf size.
  2. Add the low fat sour cream and cold water to the food processor and pulse until well combined.  Add more water if you want a runnier consistency.

For the Shrimp Taco Filling:

  1. In a medium mixing bowl, season shrimp with Cajun seasoning and mix well to ensure all shrimp are covered with and even layer of spice.
  2. Heat a large non-stick skillet over medium-high heat.
  3. Add oil to the hot pan and sauté the onions and garlic until the onions are soft, approximately 3 minutes.
  4. Add the seasoned shrimp to the pan and sauté until cooked through, approximately 2 to 3 minutes.

To Serve:

  1. Heat tortillas in the microwave for 10 to 15 seconds, or on a pan on the stove for 30 to 45 seconds.  The tortillas should be soft and bend easily without breaking.
  2. Add cheese and lettuce to the tortillas.
  3. Add 3 shrimp to each taco.
  4. Drizzle cilantro crema over the tacos and serve.
