When I first saw this craze on the internet, I will admit I was skeptical. I am not partial to feta cheese in most dishes. I find it tends to be to salty for my liking. So the ideal of creating a pasta sauce of almost purely feta? Preposterous!

However, I kept seeing video after video of this baked feta pasta and the end result always looked delicious. My curiosity got the better of me and I had to try it out for myself. This pasta is amazing!

The baked feta takes on a velvety texture and the saltiness is tamed. I added my own twist to this recipe by adding white wine, sautéed shrimp, and baby spinach. The combination was heavenly!

How to Make this Easy Baked Feta and Shrimp Pasta

While the full recipe instructions are available below, here are some tips to make this variation on this viral pasta dish!

  • First, toss your grape tomatoes, olive oil, salt, and white wine in a large baking dish. Make a space in the middle and add your brick of feta cheese. Spread your pesto over the top of the feta and bake it in the oven. I generally prefer to use goat feta cheese because it is easier on my stomach. You can use either!
  • While the feta and tomatoes are baking, sauté your shrimp and boil your pasta. I generally prefer to use rotini, since it picks up sauces really well. Other great pasta shapes to use include penne, cavatappi, or bowties. Be sure to reserve some of the pasta water before you drain it. This is important because it will make the sauce extra smooth and silky!
  • Next, mix the tomatoes and feta cheese together in the baking dish. Add the spinach, basil, shrimp, and pasta. Mix it all together until the pasta is well coated. Scoop into bowls and enjoy!

Ingredients

  • 2 pints grape tomatoes
  • 2 tbsp + 1 tsp olive oil
  • 1/2 cup dry white wine
  • 1/2 tsp salt
  • 6 oz brick goat feta cheese
  • 1 tsp basil pesto
  • 1 lb shrimp
  • 375g whole wheat rotini
  • 1 cup baby spinach
  • 1/4 cup fresh basil, sliced

Instructions

  1. Preheat oven to 400F. In a large baking dish, toss together the tomatoes, 2 tablespoons of olive oil, white wine, and salt. Place the brick of feta in the middle of the baking dish and top the feta with pesto. Bake in the oven for 30 minutes.
  2. While the feta and tomatoes bake, sauté the shrimp in the remaining teaspoon of olive oil. Cook the pasta to al dente in salted water. Reserve 1 cup of pasta water before you drain it.
  3. Once the feta and tomatoes are cooked, stir the tomatoes and feta together, breaking the cheese up as you go. Add the spinach, basil, and shrimp and stir together. Add the pasta and stir until the noodles are evenly coated. Scoop into bowls and enjoy!
