Cardamom Peach Cobbler

Ingredients
For the Peaches:
- 4 cups fresh peaches, peeled and sliced (approximately 4 medium-sized peaches)
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/8 tsp vanilla
- 1 cup granulated sugar
For the Batter:
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 cup whole milk
- 1/8 tsp vanilla
Instructions
- Preheat oven to 375F. Slice the butter into pieces and add to a 9 x 13 inch baking dish. Add the dish to the oven as it preheats to melt the butter. Once the butter has melted, remove from the oven.
- Peaches: In a saucepan, add the peaches, sugar, lemon juice, cinnamon, cardamom, and vanilla. Bring to a boil over high heat, stirring constantly. Cook until sugar is dissolved and peaches are soft, approximately 5 minutes.
- Batter: In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt. Add the whole milk and vanilla and stir until the mixture is well combined. It should be relatively runny.
- Add the batter to the baking dish with the melted butter, shaking to even the batter out. Do not stir the batter once it has been added the baking dish. Pour the peaches over the batter. Bake in the oven for 40 to 45 minutes, until golden brown. Serve warm or cool.
