My mom would often make this pork tenderloin recipe for our family.  It is quick and easy to put together and tastes great!  When I moved to my own home, I would crave this meal.  Once my mom shared the recipe with me I was shocked at how easy it is to make such a delicious main dish!  This pork tenderloin recipe uses only five ingredients, which are almost exclusively pantry staples.

How to Make My Mom's Dijon Pork Tenderloin

While the full recipe instructions are available below, here are some tips to make the best pork tenderloin for your family tonight!

  • Pork Tenderloin: if you are using a frozen pork tenderloin, you want to make sure it is fully thawed before cooking.  This is important because it ensures that the pork tenderloin will cook evenly.  I recommend thawing pork tenderloin in the fridge overnight before preparing it.  If you take your tenderloin out of the fridge to thaw it, only do so for a maximum of two hours.  This is because taking longer than this at room temperature can cause bacteria to grow that could cause an upset stomach for your diners.
  • Sauce: this sauce uses olive oil, Dijon mustard, rosemary and thyme.  It is an extremely simple sauce that packs an amazing flavor! A key consideration when preparing this meal is to ensure that the sauce is spread evenly over the pork tenderloin.  While this can be accomplished using a spoon, it is much easier and more effective with a pastry brush.  I love using this pastry brush.  It is reasonably priced and works extremely well.  It is also easy to clean and is dishwasher safe, which is a major plus!

Ingredients

  • 2 tbsp Dijon mustard
  • 2 tsp olive oil
  • 1 tsp thyme (you can use either fresh or dried)
  • 1/2 tsp rosemary
  • 1 pork tenderloin

Instructions

  1. Preheat the oven to 400F.  In a small mixing bowl, whisk together the mustard, oil, thyme, and rosemary.
  2. Place the pork tenderloin on a parchment lined baking sheet and spread the mustard mixture evenly over the pork tenderloin.
  3. Roast in the oven for 25 to 35 minutes, until the meat is slightly pink inside and the meat thermometer reads 160F.
