My dad's mushroom pork bowls are a dish I remember from childhood. He would make this every so often and it was pure comfort for me.

I remember my dad would make this meal for dinner when my mom was not home.  He would make it using a can of cream of mushroom soup, and I loved it!  He would often serve this over either rice or egg noodles.  This is great either way!

The mushroom flavors pair perfectly with the pork.  The creamy soup base creates the perfect base for a sauce over the rice or egg noodles.  This meal is pure Autumn comfort to me, and brings back memories from childhood!

How to Make my Dad's Mushroom Pork Bowls

This recipe is fairly flexible, however there are some key components that are very important.  While the full recipe instructions are available below, here are some tips to make the best mushroom and pork bowls.

  • Mushrooms: although there are mushrooms in the mushroom soup used in making this meal, I recommend adding even more!  If you are using leftovers of my healthy creamy mushroom soup for this meal, then you won't need to add many additional mushrooms to the recipe.
  • Pork: for this meal, I used 1lb of pork chops and cut them into small bite sized cubes.  You could also use a 1lb pork tenderloin and cut it into smaller pieces too.  The key when preparing the pork in this meal it so season it with salt and pepper, and sear it in a skillet.  This is important, because it helps the pork keep its texture and flavor once the mushroom soup is added.
  • Rice or Noodles: when I made this meal, I used brown basmati rice.  However, you could use white rice with this meal.  If you prefer to use noodles, I recommend using broad egg noodles for this meal.  Either way, it is a delicious and comforting fall meal!

Ingredients

  • 1 tsp olive oil
  • 4 oz mushrooms, sliced
  • 1 lb pork chops, sliced into small bite-sized pieces
  • 3 cups leftover healthy creamy mushroom soup OR 1 can of cream of mushroom soup

Instructions

  1. Heat a large non-stick skillet over medium-high heat.  Add olive oil and mushrooms.  Sauté until mushrooms are soft and moisture has evaporated, approximately 3 minutes.  
  2. Add the pork and sear it on each side.  Sauté until fully cooked, approximately 5 minutes.  Add mushroom soup over the pork and cook until heated through, approximately 2 to 3 minutes.  Serve over rice or egg noodles.
