Creamy Spinach and Rice

The secret to this creamy spinach and rice doesn't actually involve any cream at all! This is the perfect side dish to serve with dinner.

Creamy spinach and rice

This spinach dish is one of my go-to side dishes to prepare.  A cube of chicken bouillon is the secret ingredient that gives the rice its creamy texture.  Spinach and onions also add to the flavors of this dish, making it a healthy side to any meal.

How to Make the Best Creamy Spinach and Rice

While the full recipe instructions are available below, here are some tips to make the best rice.

  • First, you will sauté the onions and garlic in a saucepan.  You want to cook them until the onion starts to soften.
  • Next, you will add the rice and water to the saucepan and bring to a boil.
  • Once the rice comes to a boil, reduce the heat to low and cover.
  • When the rice has cooked for five to ten minutes, and has started to absorb some of the water, add the bouillon cube.  Check on the rice and make sure it is softening and add a little more water if necessary.
  • Once the water has almost been completely absorbed into the rice, stir in the spinach.  I recommend adding the spinach gradually and stirring it in until it wilts before adding more.
  • Finally, scoop into a serving bowl and top with shredded parmesan cheese if you would like.  Serve and enjoy!

  • 2 cloves garlic, crushed

  • 1 chicken bouillon cube
  • 1 bunch fresh baby spinach (approximately 4 cups)
