Cheesy English muffins are a comfort food I grew up with. As I got older, they became a hangover cure and a go-to recipe during university!

Growing up, I would love mornings when my dad would make these cheesy English muffins for breakfast.  He would cut the corners off of the slices of cheese to fit it to the circular shape of the bread.  I would then steal the small triangles of cheese to snack on while he worked!

As I got older, this comfort food has remained close to my heart.  I also discovered that the gooey cheese on crispy English muffins was a great cure when I had been out too late the night before.  This is a must-know recipe for any university or college student.  It is a great recipe for beginner cooks, because it is easy, quick, and delicious!

Throughout this week, I will be sharing recipes that are great for the college chef.  Some will be easy with very few ingredients such as this recipe.  Others will have a few more ingredients, but will make a large batch so you can make a batch for quick meals you can grab in a rush.  I also recommend this cookbook as a great resource!

Cheesy English Muffins

Ingredients

  • 1 whole wheat English muffin
  • 3 oz cheddar cheese, sliced to fit the English muffin
  • optional: 1 tsp ketchup

Instructions

  1. Preheat oven to broil on medium, 450F.
  2. Slice English muffin in half and toast in a toaster.
  3. Top the toasted English muffins with sliced cheese and place on a parchment lined baking sheet.
  4. Broil in the oven until cheese is melted and starting to bubble, approximately 3 to 4 minutes.
  5. Remove from oven, top with ketchup and serve.
