The best word I have to describe this meal is 'cozy'.  It is the perfect Fall weekend dinner!  The sweet and spice from the apple butter balance perfectly with the strong flavor of the parmesan.  In this recipe, we will sear the pork chops, then apply the apple butter.  We will finish the dish in the oven with the apples and onions.  This dish is best served over rice so it soaks up the pan juices.

How to Make the Best Apple Butter Pork Chops

While the full recipe instructions are available below, here are some tips to make the best version of this meal.

  • First, you will preheat your oven while also heating a non-stick skillet.  You will then sear the pork to get a nice browning on both sides.
  • Next, you will remove the pork from the skillet and set it aside.
  • Keeping the skillet on the stove, you will sauté the onions and garlic.  Then you will add the slices of apple.  This is important because it adds a sweet flavor that will be offset when we add the parmesan later in the recipe.  I recommend using honeycrisp apples in this recipe because they have a delicious sweetness to them, but are also crisp.
  • While the onions and apples are cooking, you will coat the pork chops with the apple butter mixture.  This is important, because it will add the sweet and spiced flavors to the dish while cooking.
  • Now, you will add the pork back to the skillet and complete the cooking process in the oven.  I used boneless pork chops, however you can use the bone-in option and increase the cooking time in the oven.

As I mentioned above, I recommend serving this over rice to allow it to soak up the pan juices.  I also served this with roasted carrots which were the perfect accompaniment!

Ingredients

  • 1 tbsp butter
  • 1 boneless pork chops (approximately 1 lb)
  • salt and pepper, to taste
  • 1/2 cup onion, chopped fine (approximately 1/4 of a large onion)
  • 2 cloves garlic, crushed
  • 1/4 honeycrisp apple, thinly sliced
  • 2 tsp olive oil
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme (plus more for seasoning)
  • 3 tbsp apple butter
  • 1 tsp Dijon mustard
  • 2 tbsp Parmigiano Reggiano, grated

Instructions

  1. Preheat oven to 400F.  Season pork with salt and pepper.
  2. Heat a large non-stick oven safe skillet on high heat.  Melt the butter and sear the pork on each side – approximately 3 to 5 minutes per side.  Once both sides of the pork are browned, remove from the skillet and set aside.
  3. Reduce heat to medium and add the onions and garlic.  Sauté until the onions are softened, approximately 3 minutes.
  4. Add the apples and cook until they start to become soft, approximately 3 minutes.  While the apples are sautéing, whisk together the olive oil, rosemary, thyme, apple butter, and Dijon mustard in a small mixing bowl.  Cover the pork chops with the apple butter mixture using a spoon or pastry brush.
  5. Remove the skillet from heat.  Add the pork back to the skillet.  Cook for 15 to 20 minutes in the oven, until cooked through and juices run clear.  A meat thermometer should show that it has reached an internal temperature of 135F.
  6. Sprinkle the parmesan over the pork and broil for 2 minutes, until the cheese has melted.  Remove from the oven.  Top with remaining thyme leaves and serve.
